200g vanilla cream biscuits
200g chocolate cream biscuits
125ml butter, melted
250 mil cream
15ml castor sugar
1 tsp vanilla essence
250 ml cream cheese
2tsp gelatine
3 Tbsp strawberry jam
Crush biscuits, leaving some chunky bits
and mix in melted butter. Place in a medium pie dish. Pat down and put in
fridge.
In a bowl combine cream, sugar, vanilla
essence and cream cheese. Beat together until smooth. Prepare the gelatine
according to package instruction and add to mixture. Pour this onto the biscuit
base.
Heat strawberry jam in microwave and swirl or smooth over mousse mixture. Refrigerate for 4 or more hours/ overnight. Serve cold.
